So last week, I tried my hand at this whole overnight breakfast idea. I found a recipe for a chia seed overnight pudding on Buzzfeed’s “Clean Eating Challenge”. While I am not sure I could commit to eating completely clean eating like that for two whole weeks, I did want to try this healthy recipe. This was my first time buying chia seeds as well, so there were a lot of firsts with this recipe. This was super easy. All you do is mix together almond milk, chia seeds, honey, and vanilla extract. This recipe called for figs, but alas I could not find any dried figs at the store and the fresh are not in season. I just substituted in dates for the figs. After you mix those ingredients together you put it in a sealed container overnight. In the morning it opens up as more of a pudding with the chia seeds having absorbed the almond milk overnight. So sorry I have been so neglectful of my blog as of late. In the last month and a half I have been dealing with making my photography business a legitimate business. So with that came trips to City Hall to get a business certificate, sending numerous emails to photographers to ask to assist and/or second shoot for them for weddings coming up this summer, spending time at banks to make up a business account, etc etc. So unfortunately this blog has once again gone by the wayside. When I found this super simple recipe the other night, I just knew I had to make it. Just five ingredients: Nutella, flour, brown sugar, an egg, and kosher salt. The best part was that I had everything with the exception of Nutella. It’s always nice when you don’t have to buy additional things at the grocery store. So let me show you the world’s easiest, tastiest Nutella cookie recipe: Nutella cookie recipe from Ambitious Kitchen blog. INGREDIENTS 1 cup nutella 2 tablespoons brown sugar 1 egg 1/2 cup flour + 1 tablespoon coarse sea salt for sprinkling This was such an easy, quick cookie recipe to create. I definitely recommend it. The one downfall was the fact that it only makes a small batch of cookies, I would double the recipe if you have a few people eating these. The cookies were so good that my boyfriend Matt and I ended up eating all of them in just one night haha.
A perk of living in Boston lately is the fact that you can always count on an impending snow storm about once a week. As a result of this you have to both utilize the ingredients that you have and think ahead to grab ingredients at the grocery store that you can use for more than one meal. Recently when Boston was dealing with yet another one of these snow storms, my boyfriend Matt found this easy, tasty recipe on Food & Wine’s website for Chorizo and Potato Tacos. We already had pretty much everything except for the chipotles in adobo and chorizo, so we just had to run out to the grocery store to grab those two things.
