So last week, I tried my hand at this whole overnight breakfast idea. I found a recipe for a chia seed overnight pudding on Buzzfeed’s “Clean Eating Challenge”. While I am not sure I could commit to eating completely clean eating like that for two whole weeks, I did want to try this healthy recipe.
This was my first time buying chia seeds as well, so there were a lot of firsts with this recipe. This was super easy. All you do is mix together almond milk, chia seeds, honey, and vanilla extract. This recipe called for figs, but alas I could not find any dried figs at the store and the fresh are not in season. I just substituted in dates for the figs. After you mix those ingredients together you put it in a sealed container overnight. In the morning it opens up as more of a pudding with the chia seeds having absorbed the almond milk overnight. Once you get it out in the morning, you can slice up strawberries and if you like almonds you can put some of those into the pudding as well. While the texture took some getting used to, the flavors were on point. I think I may try this again with some other fruit as well.
